This thinly sliced smoked beef originating in the the mountains of Switzerland has become a sought-after delicacy throughout Germany.  Each cut is seasoned with our Schaller & Weber spice blend, then air-dried and repeatedly pressed until the meat is ready and the deep red color is perfect. It’s an old-world process that we continue to practice today to be sure our bündnerfleisch is as great, if not better, than any others found around the world.

Like all charcuterie, Schaller & Weber Bündnerfleisch is great on it’s own, but also complements alpine cheeses in any dish or on a charcuterie board. For a traditional treat, pair it with a regional wine and savor the flavors of the Alps.

Cabricharme Cheese

What a crowd pleaser. Created little more than a decade ago, Cabricharme already feels like a cheese-counter mainstay. Who can resist this Belgian goat’s-milk charmer? The rind is gorgeous, the interior luscious and supple and the aroma off the charts.
 
The producer is a 30-year-old cooperative that works exclusively with organic raw milk—both cow’s and goat’s milk. Gotta like that. Cabricharme, like the other cheeses from this creamery, comes from the milk of a single farmer. So the members’ milk isn’t pooled, as you might expect a co-op would do. This precaution makes traceability possible, a priority at modern creameries.

Fine cheeses from Belgium have made inroads in the Bay Area in recent years, and I've been happy with almost every one I've tried. For years we had only Chimay to represent what Belgian cheesemakers could do. Now we are seeing beauties like the blue-veined Grevenbroecker, which I have written about in the past, and my latest infatuation, the goat's milk Cabricharme.(SOURCE: SFGATE)

Our white Sancerre Moulin des Vrillères is a blend of our different parcels of Sauvignon. It expresses clearly its aromas of white flowers and citrus fruits, and lingers long on the palate. The dominant fresh mouth does not betray its terroir. One can open it as an aperitif and finish it with fresh or mature goat's cheese.

This is a winemade from Pinot Noir by the saignée method. The juice is separated from the skins once th colour is right.
