The beef tenderloin is the most tender piece of beef available. Once it is removed from the loin, it should weigh 7 pounds. After it is trimmed and tied, the finished weight is around 4.5 pounds. This should feed 8 people nicely. From a whole roast we can cut a Chateaubriand roast, which is the center section of the tenderloin. It is very uniform in shape and has the most marbling and therefore more flavour. Chateaubriand roasts can feed 4 people.
